Junkos "Ichiju-sansai" Cookery Demo

Food in Japan is regarded as an important part of everyday living which traditionally stems from the Buddhist beliefs that cooking and eating are indeed a discipline in themselves. At Zen temples today, meals prepared for monks in training are simple, delicious and of course healthy. They consist of one soup, one side dish, and a bowl of rice. Most Japanese families today prepare similar balanced meals, but include meat and fish as part of their diet too, unlike Buddhist monks, called ‘Ichiju-sansai’. This concept of preparing and planning meals consists of one soup, three side dishes, rice & pickles.

Junko Hamilton, a native of Kyoto Japan, has extensive knowledge and experience of various culinary styles including Japanese, Asian, and more recently Irish. Junko plans to teach us not only how to prepare the foundations of basic Japanese dishes, but will aim to educate us on how ‘what we eat is very much a part of what we become’. 

Junkos Menu:


• Duck in Soy and Port Sauce, with spring onion (Kamo no Kuwa-Yaki)Ireland Cookery School Japanese Cookery Demonstration Duck in Soy
• Salmon Teriyaki with ginger (Sake no Shouga Teriyaki)
• Spinach with sesame sauce  (Hourennsou no Ohitasi)
• Green beans with sesame sauce
• Daikon salad (Radish Salad)
• Miso soup with seaweed (Wakame no Misosiru)
• Pickeld Chinese Cabagge (Hakusai no Tsukemono)
