Escape to the Boyne Valley for an indulgent overnight experience combining artisan food, boutique comfort, and relaxed countryside charm.
Hosted by Thelma Slattery, co-founder and creator of The Station House, this workshop celebrates a lifelong commitment to artisan food, local produce, and the culinary heritage of the Boyne Valley. Thelma continues to play an integral role in shaping the hotel’s food ethos, with a focus on seasonal ingredients, traditional methods, and small-batch craftsmanship.
Her outstanding contribution to Irish hospitality was recently recognised with a Lifetime Achievement Award at the 2026 Gold Medal Awards, honouring her passion, creativity, and long-standing impact on the industry.
Renowned throughout the Boyne Valley for her homemade preserves, Thelma’s jams are a signature feature of the hotel and are also sold as part of its curated gift boxes and hampers. Her expertise and passion for flavour come together in this hands-on workshop, where guests are introduced to the art of preserving using time-honoured techniques and locally sourced ingredients.
During the afternoon session, guests will learn how to create their own jams and preserves, exploring practical methods, flavour combinations, and tips to recreate at home, all within a relaxed, immersive setting in the heart of the Boyne Valley.

Day 1:

- 14:00 – 17:30 Jam Making Workshop
- 18:00 – 19:00 Walk or cycle to Bective Abbey (or have a rest)
- 19:30 Dinner in The Signal Restaurant
- 22:30 ~ After Dinner Drinks in the Platform Bar
- Sleep tight
Day 2:
- 08:00-10:00 Breakfast
- 11:00 Check out
- Drive or cycle to Bective Abbey (4km) or The Hill of Tara (7km) for some history and heritage
