The Signal Restaurant
The Boyne Valley is as fertile as it is beautiful, giving the chefs at The Signal Restaurant a rich supply of fresh, high quality ingredients. We also produce vegetables and fruit ourselves in the kitchen gardens, within the 12 acres of grounds that surround The Station House and at Thelma’s own garden, nearby. Using our own produce, we make jams, chutneys and preserves in the hotel kitchens, where we also bake fresh breads and scones daily. With all of these delicious ingredients at our disposal, The Signal Restaurant’s menus always make the most of whatever ingredients are in season and at their best.
Little wonder, therefore, the Signal Restaurant has drawn praise from critics, local and international guests, as well as multiple award judges.
