Head Chef Gordon Mooney and his team have spent weeks refining a spectacular 7-course tasting menu. Reflecting the very best of the season, every dish features ingredients sourced directly from the lush landscape that surrounds us.

The Evening Itinerary
- 7:00 pm: The festivities begin with a complimentary pre-dinner cocktail—the perfect opportunity to shake off the winter chill and mingle with fellow guests.
- 7:30 pm: Guests are invited to The Signal Restaurant for the start of service. Dinner is a leisurely affair spanning the final hours of 2025, ensuring you are well-fed and in high spirits as the countdown approaches.
- Midnight: The night doesn’t end with dessert! As midnight draws near, we ensure every guest has a glass of champagne in hand to toast the arrival of the New Year.
- The After-Party: Following the toast, the bar comes alive with live music and dancing late into the night.
Dress Code: Black-Tie or “Glam as you can!” We encourage you to embrace the theme fully—New Year’s Eve is the perfect excuse to dress up and feel spectacular!
